Description
CORTE DOMINA CHIANTI CLASSICO DOCG has a lively and intense ruby red colour; it has fragrant and inviting aromas, a delicate floral scent of violets and iris, dominated by black and red fruits such as blackberry, currant and raspberry. The taste is crisp and juicy with well-presented and integrated tannins, structured and at the same time lively and harmonious. It goes well with first courses, Tuscan salami and pecorino cheeses, red meat dishes and game.
- Grape varieties: sangiovese 80% and merlot 20%.
- Cultivation system: spurred cordon and guyot. The vineyards are organically managed with different exposures, always sunny, and an altitude of 430m above sea level.
- Soil: Chianti marl, clays of various colours and skeleton.
- Vinification: destemming and soft crushing of the hand-picked grapes, alcoholic fermentation in stainless steel tanks at controlled temperature as well as malolactic fermentation, ageing continues in steel for a minimum of 18 months, the wine then rests in the bottle for a minimum of 24 months.
