Description
In “Petresco” the quality level rises to noteworthy peaks, as witnessed by the great aromas expressed on the nose and the excellent refinement in the mouth. The grapes, rigorously selected to represent only the best of the “terroir”, are vinified in cement tanks, fermenting at a temperature that never exceeds 28 °C; they are then racked into barriques, where they rest slowly for 18 months before being bottled and further refined in bottles for 12 months. On visual inspection it has a garnet colour. The aromas on the nose open with notes of undergrowth herbs and ripe fruit, and then move towards spicy and balsamic aromas. On the palate it has an excellent structure, with a lively flavour and excellently gentle tannins. It closes with a persistent finish, characterised by a bitter aftertaste. A wine with a natural gastronomic inclination, it goes well with first and second courses, as well as with mature cheeses; it is excellent with both red meat and game.
