Description

The “Santa Brigida I.G.T. Colli della Toscana Centrale” is produced with grapes from the vineyards “La Volpaia” and “La Leccia”, located at about 400m above sea level on alkaline, stony and not very fertile facing south soils.
The vines are trained to the “Archetto Toscano” system with a 2.7m*0.8m “trellis” and are managed in such a way as to ensure that production yields are strictly limited.

  • Varieties: Sangiovese 40%, Cabernet Sauvignon 30%, Merlot 20%.
  • Vinification: The three varieties are vinified separately, in small containers and at a controlled temperature. Extraction is optimised with a number of “délestages” that varies according to the characteristics of the vintage. This is followed by spontaneous malolactic fermentation.
  • Maturation and Ageing: Maturation takes place in French (90%: Allier, Nevers, Tronçais, Vosges) and American (10%: West Cumberland) oak barrels for about 1 year, followed by slow ageing in the bottle for at least another year.
  • Alcohol: 14%
  • Total Acidity: 5.81 g/l
  • Net dry extract: 29.7 g/l

Organoleptic characteristics of the wine

  • Aroma: Very intense, notes of blackcurrants and other berries, accompanied by notes of toasted oak and spices, liquorice.
  • Taste: Fresh but soft attack, complex and harmonious, with great tannic structure; long persistent closure with notes of liquorice. All in perfect “Supertuscan” style. A wide glass is recommended to encourage oxygenation and to develop its aromatic and gustatory qualities to the full.
