Description
The “Podere Sassaie” is a dry white wine born from the experience gained with the “Pourriture Noble” (sweet wine made from noble rot in the style of Sauternes), it is produced with a blend of grape varieties traditionally grown in France such as Sauvignon Blanc, Sémillon and Chenin Blanc.
The grapes are harvested by hand, the vinification takes place with soft pressing and the fermentation is in stainless steel for about 20/25 days. It is then aged in steel on the noble lees for 6 months.
The wine has great ageing potential and reaches its best structure and aromatic complexity 3-4 years after harvesting. The taste has a good sapidity, it denotes character, dynamism and elegance with a long and mineral finish.
